Bit of a leap from point 18 to 19 !

Thanks for the feedback. It is a leap, but remember this is a "getting started" document. It's aimed at beginners, and the quickest way to get going with JK is to set it all up with as many defaults as possible and with the default of just one track. So, clicking through dialogs and accepting their defaults speeds things along. As the note in Step 18 says, "See Appendix B for more details" on all that trackish stuff. Some beginners with JK will only use one mic anyway, so the 1-track setup is all they'll need.
