At this point I am not that concerned with exact latency so can I just use my PC camera & its mic to jam with one or two others?

Audio depends mostly on your sound cards' capabilities (JamKazam will not allow 'high latency gear' taking part in peer-sessions) (I do believe that a minimum 'Silver' subscription is needed to use any kind of video)
