2 Cameras per musician?

In this great demo, I see a couple of cameras per musician, for example these timecodes:  one violinist has an over the shoulder hand held and the [/url][url=https://youtu.be/Q-hnNYp7Gs8?t=73]cellist has a handheld close up.

Any tuts on this?

Would love to do this live, and record the whole show down to 1 video/stereo as shown in the link above.
