I am totally confused what the Personal Mix vs Stream Mix gain adjustments do. Whatever we do there seems to influence what others hear (and presumably what is being recorded). Is there any way to adjust the personal mix levels between the local and remote tracks, without influencing what others hear and what is being recorded?

Well yes, I have read that, but it seems that the personal mix levels also influence what the others hear, so we couldn't really use them. I am not sure whether there was user error in play.
