Using two Channels on Scarlett from Live Participant but only see one channel

I believe you should set the hardware interface controls for each channel to peak just before clipping as indicated by the level indicators. Then use the JK mixer sliders on each input to set the proper mix and stereo balance you want.
What I do - set JK volume controls to 0db.  Then adjust my audio interface gain controls so they peak at the top of the green, maybe 1st red occasionally, under My Audio Tracks on the left.  In session, I'll adjust my input to balance my vocals / instrument as checked by another musician (usually they'll tell you if one is too hot) 😁.  I often find I have to set my own level(s) down under Personal Mix to hear the others clearly as I am also hearing myself somewhat outside of my headphones.
